Gluten Free Mexican "Rice" Salad

Anyone else LOVE riced cauliflower?  I am kind of obsessed with it these days!  I do so many things like making cauliflower tabouli, bacon and cheese cauliflower pancakes and even cauliflower pizza.  This is a new one for you to enjoy! It is gluten free, can be dairy free if you leave out the Cotija cheese, nut free, egg free, soy free, shellfish free and SUPER delicious.  Enjoy the recipe and share with your Pinterest friends.

Mexican Riced Cauliflower Salad with Chili Lime Dressing

Serves 4

 

Ingredients:

1 Pound Bag Riced Cauliflower 

1 Tablespoon Red Onion, Diced

1/4 Cup Mini Sweet Peppers, Sliced Thin

2 Tablespoons Jicama, Diced

1/4 Cup Gluten Free Bacon, Cooked And Roughly Chopped

1 Tablespoon Cilantro

2 Tablespoons Cotija Cheese (If you are dairy free you can leave this off)

1/4 Cup Pico De Gallo Salsa, (buy your favorite safe brand)

 

Dressing Ingredients:

1 Teaspoon Lime Zest (about 2 limes)

1/4 Cup Lime Juice (about 3 limes)

2 Tablespoons Olive Oil

1 Tablespoon Agave

1/2 Teaspoon Kosher Salt

1/2 Teaspoon Chili Powder

1/4 Teaspoon Cumin

 

Directions:

1. Bring about 6 cups of water to a boil in a saucepan.  Add riced cauliflower and cook for 5-7 minutes.  Drain and place in your mixing bowl. 

2. Add the rest of the ingredients to the cauliflower. 

3. Place dressing ingredients in a small mason jar, seal with the lid and shake to combine.  Add to the cauliflower mixture and stir to combine. Serve warm or cold.
